Ceylon cinnamon is milder in aroma and flavor and contains less coumarin than cassia – and that’s a good thing, because too much coumarin can be harmful. Cinnamon is loaded with antioxidants known as polyphenols. Antioxidants protect the body from oxidative stress caused by free radicals.
